Food
Injera is the all-rounder of Eritrean and Ethiopian cuisine. It is a sourdough flatbread made from teff, freshly prepared in-house daily. Injera forms the base for all dishes and also serves as a delicious utensil substitute. The sourdough requires at least three days to reach perfection, ensuring the flatbread develops delicate bubbles when cooked on the pan.
Accompanying the Injera are various sauces, known as Wot, offered in both vegetarian and meat-based versions. These dishes range from mild to spicy. For those who enjoy extra heat, all dishes can be seasoned with Mitmita, a chili variety directly imported from Eritrea.
